White Tea: White tea is made from immature tea leaves that are picked shortly before the flowers have fully opened. The name white tea comes from the silver fuzz that still covers the flower buds.  These flower buds turn white when the tea is dried. The variety of white tea depends on the proportion of buds to leaves. 

White tea is the closest to a unrefined state an many studies indicate that white tea is better for you because of the higher levels of polyphenols.
